Made this bread again but doubled the recipe because I only have a meatloaf pan. Note: Too much batter. Stick to 1.5 recipe for a meatloaf pan. In the doubled recipe, subbed 1/3 cp almond flour for 1/3 cp arrowroot but still added the remaining 1/3cp arrowroot. Still turned out great and my blood sugar remains at a nice cruising altitude for about 3-4 hours. Love it!
